Preserve Flavor When Drying Herbs and Spices
Use dry ice or liquid CO2 to preserve the essential oils in herbs by flash freezing before you grind. Flash frozen herbs and spices shatter rather than mashing when ground, so the flavor oils are not diminished by heat or exposure to oxygen.
